  • 1-1/2 pounds beef flank or other steak
  • 1 cup chopped onion
  • 1 green sweet pepper, cut into 1/2-inch pieces
  • 1 or 2 jalapeno peppers, chopped
  • 1 T cilantro, chopped
  • 2 cloves garlic, minced OR 1/4 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1 can (8 oz) chopped tomatoes (1 cup)
  • 12 8-inch flour tortillas
  • Your favorite toppings, such as: shredded Cheddar cheese, sour cream, hot sauce, guacomole, salsa, chopped green onions, tomatoes, etc.
  1. Cut steak into 6 portions
  2. In crockpot combine meat, onion, green sweet pepper, jalapeno pepper, cilantro, garlic, chili powder, cumin, coriander and salt
  3. Add tomatoes
  4. Cover and cook on LOW for 8 to 10 hours or on HIGH 4 to 5 hours
  5. Remove meat from crockpot and shred
  6. Return meat to crockpot and stir
  7. To serve fajitas, spread meat mixture into
  8. flour tortillas and top with above mentioned toppings if desired
  9. Roll up tortillas
