Pasta with Roasted Vegetables< recipes

 

4 cloves garlic cloves, peeled
2 small tomatoes, cut into wedges
1 zucchini, cut in half and sliced
1 small onion, cut into wedges
2 tablespoons extra-virgin olive oil
2 cups penne or ziti pasta

Heat oven to 375 degrees F. Arrange garlic and
vegetables in a 15 X 10 inch baking pan with
sides. Drizzle with oil and season with salt and pepper.

Roast 20 to 25 minutes or until vegetables are tender, stirring occasionally.

Meanwhile, cook and drain pasta as directed on
package. Place in large serving bowl.

Mash roasted garlic with fork. Toss garlic and vegetables into the hot pasta.
