1 9 oz. package refrigerated cheese tortellini
1/2 of a 7 oz. jar roasted red sweet peppers 1/2 cup refrigerated lite Alfredo sauce 1/2 cup fresh basil, shredded 1/2 teaspoon coarsely ground pepper Cook the tortellini according to package directions; drain.
Meanwhile, drain the roasted sweet peppers and cut into 1/2 inch wide strips. Into a large saucepan heat the Alfredo sauce. Add the cooked and drained tortellini. Reduce heat; add the sweet pepper strips. Simmer, uncovered for 5 minutes, stirring often. Stir half of the basil into the pasta mixture. Spoon mixture into shallow pasta bowls or into dinner plates. Sprinkle with ground black pepper and top with the remaining basil. Makes 3 servings. |
