1,000 Island Dressing

1/2 cup mayonnaise
2 Tablespoons ketchup
1 Tablespoon white vinegar
2 Teaspoons sugar
2 Teaspoons sweet pickle relish or chopped pickles
1 Teaspoon finely minced white onion
1/8 Teaspoon salt
few grindings black pepper, to taste

Combine all ingredients in a bowl.
Stir well to combine/
Refrigerate several hours, stirring occasionally, to allow sugar to dissolve and flavors to marry.

Bacon & Cheddar Dip

1 packet Ranch Dip Mix
16 oz. sour cream
1 cup shredded Cheddar cheese
1/4 cup bacon
Tortilla or corn type of chips, to dip

Crumble bacon.
Mix all ingredients in a suitable bowl.
Chill.

Cranberry Salad Too

8-1/4Oz. Pineapple, Crushed
1 Tablespoon Gelatin, Unflavored
3/4 Cup Cranberry Sauce
2 Cups Water
3Oz. Gelatin, Cherry
1/2 Cup Celery, Chopped
1/2 Cup Pecans, Chopped

Drain pineapple and add enough water to the juice to make 1/2 cup.
Soak unflavored gelatin in this mixture.
Dissolve cranberry sauce over low heat.
When dissolved, add water and heat well.
Dissolve cherry gelatin and unflavored gelatin mixture in hot cranberry mixture.
Add the pineapple, celery.

Cranberry Salad

2 Cups Cranberries, Ground
2 Cups Apples, Chopped
3/4 Cups Sugar
1 Large Box Cherry Jell-O
3 Cups Water (2 Cups Boiling, 1 Cup Cold)
1 Cup Chopped Nuts
1 Cup Crushed Pineapple
1/4 Cups Chopped Celery

Mix cranberries, apples and sugar and let stand for two hours.
Make Jell-O, using 2 cups boiling water and only 1 cup cold water, and add the pineapple juice from the crushed pineapple.
Partially set the Jell-O, and add the cranberry mixture, the pineapple, nuts, and celery.

Egg Nog

4 egg yolks
1/3 cup sugar, plus 1 tablespoon
1 pint whole milk
1 cup heavy cream
3 ounces bourbon*
1 teaspoon freshly grated nutmeg
4 egg whites

Beat the egg yolks in a standard mixer until their color lightens.
Gradually add the 1/3 cup sugar.
Continue to beat until the mixture is completely dissolved.
Stop blender.
Add the milk, cream, bourbon and nutmeg and stir to combine.
Remove to a bowl.
Now beat egg whites until you get soft peaks.
Slowly add in 1 tablespoon of sugar and beat until stiff peaks form.
Whisk the egg whites into your bowl.
Chill and it is ready to consume.

Rum is also traditional as is a good Brandy. Use whatever alcohol you prefer to customize this recipe.
Note, eggs are not cooked. Beware of anyone who has a raw egg allergy.

Split Pea and Ham Soup

2 Packages Split Peas
1 Ham Hock With Bone
Ham, Cooked & Cubed
Potatoes
Carrots
Celery
Onion
Salt & Pepper

Cut potatoes into cubes.
Cut carrots into 1/4 inch pieces.
Cut celery into 1/4 inch pieces.
Coarsly dice onion.
Put ham bone, peas, celery and onion into a stock pot.
Cover with water.
Boil for 1 to 1 1/2 hours. Soup will thicken up while cooking.
Add ham and potatoes.
Cook until potatoes are soft.
Season to taste with salt, pepper and garlic.

Cucumber Sauce

2 Large Cukes
2 Cups Sour Cream
2 Teaspoons Lemon Juice
4 Tablespoon Fresh Dill (or 4 Teaspoons Dried Dill)
1/4 Cup Heavy Cream
1 Teaspoon Salt
1/4 Teaspoon Pepper

Peel, seed and grate cukes.
Whip heavy cream.
Add cukes to sour cream.
Mix in lemon juice, dill and sour cream.
Add salt and pepper and mix to blend.

Great on fish, excellent dip for crackers!

 

Holiday Morning Cheeseburger (Bloody Mary)

To a large pitcher add:

4 Regular Size Cans Of Condensed Tomato Soup
2 Small Cans Tomato Paste
2 Tablespoons Horseradish
1 Tablespoon Celery Seed
1 Tablespoon Hot Sauce (Use More or Less Per Your Taste, or Particular Hot Sauce)
4 Beef Bouillon Cubes Dissolved In 1 Oz. Of Water
4 Oz. Worcestershire Sauce
Salt and Pepper to Taste

Mix it all up really good.
Fill a drink glass with ice.
Pour in 1 1/2 oz. vodka (use more or less to your own particular ability to hold alcohol).
Fill glass with cheeseburger mix.
Stick a stalk of celery into the glass, or optionally, hang a large shrimp over edge of glass).

 

Warm Reuben Spread

4 Oz. Cream Cheese, Softened
1/2 Cup Thousand Island Dressing
1 Cup Sliced Deli Corned Beef, Chopped
3/4 Cup Well-Drained Sauerkraut
8 Oz. Swiss Cheese, Chopped
Deli-Style Rye Crackers

Heat oven to 350.
Mix cream cheese and dressing in medium bowl.
Stir in all remaining ingredients except crackers.
Spread onto bottom of 9-inch pie plate or shallow dish.
Bake 20 min.
Serve with your favorite chips or crackers.

Broccoli Dip

2 Cans Cream of Mushroom Soup
1/2 Stick Butter
2 (10 Oz) Bags Chopped Broccoli
1 Onion, Chopped
6 Oz. Soft Cheese Spread
1/4 Cup Mushrooms, Chopped
Garlic to Taste
Jalapenos, Chopped, to Taste

Saute Onions in butter.
Cook broccoli.
Add broccoli, onions, cheese, soup, and mushrooms in a large bowl.
Mix well.
Salt & Pepper to taste.
